The biscuit base

  1. Crush the biscuits as fine as you can
  2. In a bowl, combine the crushed biscuit crumbs, lemon rind, juice and butter
  3. In a 20 cm spring-form tin, line the sides with the biscuit mixture
  4. Put in the fridge

The Filling

  1. In a bowl, combine the gelatine and water
  2. Leave it in the bowl for 10 minutes. It will swell.
  3. Beat the cream cheese until it is soft
  4. Add and beat sour cream
  5. Add the sugar, lemon juice, rind and vanilla
  6. Beat the mixture until the sugar has dissolved
  7. Dissolve the gelatine over hot water
  8. Add to the cheese mixture

The final stage

  1. Pour the filling into the biscuit base
  2. Chill in the fridge until it has set.
